Lemon Grass Tea

Ingredients for Lemon Grass Tea (frappe)
  • 1 tablespoon of ground lemon grass
  • 1/2 litre of water, 200hm of sugar
  • 10 limes (8+2 for garnish)
  • 4 bags of black tea, 500 gm of ice cube
  • 1 small bunch of coriander
Directions
  1. Combine water and sugar in a saucepan and bring to boil
  2. Add lemon grass and the juice from 8 limes and simmer for 5 minutes
  3. Turn off the fire and infuse the black tea
  4. Strain and chill
  5. To serve, fill a shaker (or a container with a tight lid will suffice) with ice cubes and add the lemon grass tea
  6. Shake vigorously for 30 seconds
  7. Serve with slices of lime and sprigs of coriander
